Brioche of Kings

The brioche des Rois, also called Kingdom, is a specialty of the south of France for Epiphany, which subsequently spread to the rest of the country.

Ingredients:

Pour le mini levain

  • 125g of flour

  • 2 teaspoons dried baker's yeast

  • 65g of water

The rest:

  • 500g of flour

  • 100g of powered sugar

  • 100g of soft butter

  • 100g of lukewalm milk

  • 3 eggs

  • 1,5 little spoon of salt

  • 50 ml of Rum

  • 300g of mixed candied fruit

  • 1 bean

Preparation:

  • Mix the ingredients for the mini sourdough in a salad bowl.

  • Cover and put in a place away from drafts while you prepare the rest.\

  • In a second bowl, beat the sugar with the butter.Add the eggs one at a time, continuing to beat.

  • Then add the warm milk, rum, salt and flour.

  • Knead for about 15 minutes.

  • Add the mini sourdough made previously and knead until you obtain a soft and elastic dough.

  • Then let the dough rise in a sheltered place for about 2h30. The dough should increase in volume.

  • Butter a spring form pan and a small bowl. Invert the small bowl into the springform pan. Thanks to him the crown will form without problems.Renverser ensuite ce pâton sur le plan de travail fariné.

  • Roll it out with a rolling pin. Reserve the candied fruit for decoration (a handful).

  • Put the other candied fruits and the broad bean on 1/2 of the dough.

  • Fold in 2 then in the other direction in 3 like a puff pastry.

  • Re-roll. The filling is well distributed.

  • Then form a ball. Put in the bean.

  • Let it rise again for 1/2 hour to 3/4 hour.

  • Preheat the oven to 180°C. Glaze the brioche with the egg and add the candied and dried fruits for decoration.
