Chestnut chocolate truffles recipe

History of the chocolate truffle
The chocolate truffle was invented by Louis Dufour in Chambéry in 1895.
As Christmas approached, the pastry chef ran out of raw materials and came up with the idea of mixing crème fraîche, cocoa powder and vanilla in melted chocolate before surrounding it with cocoa powder. Thus was born the chocolate truffle.
Ingredients
200g dark chocolate to break into pieces
300g of vanilla chestnut cream
125g of butter
1 tablespoon of cocoa
Preparation
Melt the butter over low heat and then add the chocolate. To mix together.
As soon as the mixture is melted, add the cocoa powder and the chestnut cream. Whisk everything.
Place in the refrigerator for 2 hours.
Take out of the refrigerator and make balls with your hands and roll them in cocoa powder.
Put them back in the refrigerator and take them out 30 minutes before eating them.
