Vegetarian recipe, polenta burger with squash
A vegetarian and delicious recipe idea for who loves polenta, squash and mozzarella: polenta burgers.
Ingredients
La polenta
15ml olive oil
1 crushed garlic clove
1 liter of milk
200g polenta
6 sun-dried tomatoes
20g grated parmesan
Pumpkin
600g delicata or butternut squash
15ml olive oil
4 tbsp barbecue sauce
Le montage
30g pumpkin seeds
150g mozzarella, sliced
Preparation
Prepare the polenta.
Heat the olive oil in a saucepan, add the garlic, cook for 1 minute.
Add the milk, salt, bring to a boil. Reduce the heat and add the polenta while mixing with a whisk.
Let cook for 3 minutes. Add the sun-dried tomatoes to the oil, the parmesan and mix well.
Divide into pastry circles placed on baking paper, wrap in cling film and leave to cool for at least 30 minutes.
2. Meanwhile, prepare the squash.
Preheat the oven to 200°C. Put the squash in a salad bowl, drizzle with oil, salt and pepper, then place them on the baking sheet lined with baking paper and bake for 15 minutes.
3. Take them out and brush them with barbecue sauce.
4. Toast the pumpkin seeds in a dry pan.
5. Cook the polenta patties in a pan with oil, about 3 minutes on each side.
6. Mount the burgers. Add a polenta pancake, one or two slices of squash, mozzarella, repeat, and finish with the squash seeds.
